Chicken Fajitas

  1. Cut up chicken into thin slices.
  2. Saute chicken in oil with garlic until no longer pink.
  3. Add onion and pepper and continue to stir-fry.
  4. Add cumin, oregano and salt.
  5. Just before removing from heat, add sherry.
  6. Warm tortillas one at a time in ungreased frying pan.
  7. Assemble fajitas at the table by placing a large spoonful of the chicken mixture plus any desired garnish in the center of a tortilla; fold up bottom and sides to make fajita.
