Irish Soda Bread
- 2 c. sifted plain flour
- 2 Tbsp. sugar
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1/2 tsp. cream of tartar
- 1 stick butter or margarine
- 1/2 c. raisins
- 1 Tbsp. caraway seed
- 2/3 c. buttermilk or sour milk
- 1 egg, slightly beaten
- Heat oven to 375u0b0.
- Combine dry ingredients and sift into medium-large mixing bowl.
- Cut butter or margarine into chunks and cut into dry mixture with pastry blender until mixture is size of peas.
- Mix in raisins and caraway seed; add milk and egg all at once.
- Stir with fork until just blended.
- Turn into greased pie plate, mounding in center; with sharp knife, make four slashes in shape of cross.
- Bake 30 minutes or until browned on top.
- Great with a cup of strong, hot tea on a gray day!
