Blt Pie
- 8 slices bacon, fried crisp, crumbled and divided
- 1/3 c. shredded Monterey Jack cheese
- 1 c. chopped tomato
- 2/3 c. chopped onion
- 2 Tbsp. chopped parsley
- 1 Pet-Ritz pie crust shell
- 1 egg
- 2/3 c. Pet evaporated milk
- 1 tomato, thinly sliced
- 1/3 c. shredded lettuce
- Preheat oven and baking sheet to 350u0b0.
- In a small bowl, combine half the bacon, cheese, chopped tomatoes, onion and parsley.
- Spoon into pie crust.
- Beat egg with evaporated milk. Slowly pour over bacon mixture.
- Arrange sliced tomato on top of pie.
- Bake on preheated baking sheet for 35 minutes (30 minutes for regular crust) or until pie crust has browned or until knife inserted in center comes out clean.
- Let stand for 15 minutes; top with shredded lettuce and remaining bacon.
- Serve.
- Makes 8 servings (6 for regular crust).
