Double Chocolate Mint Chip Cookies

  1. Heat oven to 375u0b0.
  2. Melt 1/2 package of mint chocolate chips in microwave.
  3. Let cool to room temperature.
  4. In bowl, combine flour, baking soda and salt; set aside.
  5. In separate bowl, beat butter, brown sugar, sugar and vanilla until creamy.
  6. Add melted chips and egg; beat well.
  7. Gradually blend in flour mixture.
  8. Stir in remaining chips and nuts.
  9. Drop by spoonfuls onto greased cookie sheets.
  10. Bake for 8 to 9 minutes.
  11. Allow to stand 2 to 3 minutes before removing from cookie sheets.
  12. Cool completely. Makes 1 1/2 dozen.
