Double Chocolate Mint Chip Cookies
- 1 (10 oz.) pkg. mint chocolate chips, divided
- 1 1/4 c. flour
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. soft butter
- 1/2 c. firmly packed brown sugar
- 1/4 c. sugar
- 1/2 tsp. vanilla
- 1 egg
- 1/2 c. chopped nuts
- Heat oven to 375u0b0.
- Melt 1/2 package of mint chocolate chips in microwave.
- Let cool to room temperature.
- In bowl, combine flour, baking soda and salt; set aside.
- In separate bowl, beat butter, brown sugar, sugar and vanilla until creamy.
- Add melted chips and egg; beat well.
- Gradually blend in flour mixture.
- Stir in remaining chips and nuts.
- Drop by spoonfuls onto greased cookie sheets.
- Bake for 8 to 9 minutes.
- Allow to stand 2 to 3 minutes before removing from cookie sheets.
- Cool completely. Makes 1 1/2 dozen.
