Deb'S Quiche
- 6 oz. turkey bacon, cooked according to directions
- 1 medium onion, chopped (3/4 c.)
- 2 medium tomatoes, chopped (2 c.)
- 1/2 lb. mushrooms, chopped
- 2 c. Egg Beaters
- 16 oz. nonfat sour cream
- 10 oz. pkg. frozen spinach, thawed and water squeezed out
- 10 oz. pkg. frozen broccoli, thawed and water squeezed out
- 1/2 tsp. nutmeg
- 1/2 tsp. cayenne pepper
- 8 oz. shredded reduced-calorie cheese
- 2 deep dish pie crusts
- Saute onion, mushrooms and tomato until soft; drain and set aside to cool.
- Combine Egg Beaters, sour cream, nutmeg and cayenne with whisk.
- Stir in cheese, onion mixture, broccoli, spinach and turkey bacon.
- Divide into the deep dish pie crust. Bake at 375u0b0 for 30 to 40 minutes or until knife inserted in center comes out clean.
