Country Chicken And Sausage
- 4 medium potatoes, cut into bite size
- 4 medium bell peppers, cut into bite size
- 1 Tbsp. oil
- 1/2 c. water
- 1/2 tsp. salt
- 1/2 tsp. oregano
- 1 (10 oz.) pkg. frozen whole beans
- 1 (2 1/2 to 3 lb.) fryer, cut up
- 1 large onion, quartered
- 1 lb. smoked sausage, cut into bite size
- In large open roasting pan, mix potatoes, sausage and oil. Bake at 425u0b0 for 15 minutes.
- Cut each chicken breast in half. Separate onion into pieces.
- Add chicken, onion, bell pepper, water, salt and oregano, tossing until mixed.
- Bake for 15 minutes.
- Separate beans under running water; drain.
- Sprinkle beans over chicken mixture.
- Bake 15 to 20 minutes longer, until chicken and vegetables are tender, stirring occasionally.
- (Serves 6.)
