Cajun Red Beans And Rice

  1. Place beans in a large kettle; add water, cover and soak overnight.
  2. Next day, add onion, green pepper, celery, ham, salt, cayenne and black pepper to beans in the soaking water.
  3. Bring to a boil, then reduce heat to simmer.
  4. Cover and cook 2 hours or until beans are tender.
  5. Stir in onion tops.
  6. Uncover and cook about 30 minutes longer.
  7. Serve over hot rice.
  8. Makes 8 servings.
