Game Time Chili
- 3 tablespoons olive oil
- 1 1/2 cups onions (chopped)
- 8 garlic cloves (Chopped)
- 1 bell pepper (chopped)
- 2 jalapeno peppers (chopped)
- 2 lbs ground beef
- 1/4 cup taco seasoning (I like Kittenkals Taco Seasoning)
- 1 teaspoon basil
- 1/2 teaspoon oregano
- 1/2 teaspoon thyme
- 1 (15 ounce) can tomato sauce
- 3 cups chicken stock (or beef)
- 1 (6 ounce) can tomato paste
- In a large pot heat olive oil and sautee onion,. garlic, and peppers till soft.
- Add ground beef and fry till brown.
- Add remaining seasonings and stir in well.
- Add tomato sauce, chicken stock, and tomato paste.
- Bring to a boil then simmer for 1 hour.
- Tastes better the next day but can be served right away.
- If you want to add beans go ahead.
