Very Berry Cheesecake
- 1/4 c. margarine or butter, melted
- 1 c. graham crackers, crumbled
- 1/4 c. sugar
- 1 (8 oz.) pkg. cream cheese, softened
- 1 (14 oz.) can sweetened condensed (not evaporated milk)
- 3 eggs
- 1/4 c. lemon juice (2 small lemons)
- 1 (8 oz.) container sour cream
- 1 qt. fresh whole strawberries, cleaned, hulled and chilled
- 1 (16 oz.) pkg. prepared strawberry pie glaze, chilled
- 1/4 tsp. salt
- Preheat oven to 300u0b0.
- Combine margarine, crumbs and sugar; pat firmly on bottom of 9-inch spring-form pan.
- In large mixer bowl, beat cheese until fluffy.
- Beat in sweetened condensed milk, eggs, and salt until smooth.
- Stir in lemon juice.
- Pour into prepared pan.
- Bake 50 to 55 minutes or until cake springs back when lightly touched.
- Cool to room temperature.
- Chill.
- Spread sour cream on cheesecake.
- Top with strawberries and glaze.
- Refrigerate leftovers.
