Potato Balls (Rellenos De Papa)(Puerto Rican Dish)
- 2 lb. potatoes, peeled and quartered
- 8 c. water
- 4 Tbsp. butter
- 1 egg, slightly beaten
- 1/2 tsp. salt
- 1 Tbsp. cornstarch
- vegetable oil and cornstarch
- salt pork
- 1 tsp. salt
- 1 tsp. vinegar
- 1/4 tomato sauce
- 1 lb. ground beef or pork
- 2 oz. chopped ham
- 1 green pepper
- 3 sweet chili pepper, seeded
- 1 onion
- 2 clove garlic
- 6 stuffed olives
- 1 tsp. capers
- 2 eggs, boiled and chopped
- Boil potatoes until soft; drain.
- Add butter, whip well.
- Add egg, salt, cornstarch and cool.
- Divide into 12 parts.
- Make a potato ball and roll in cornstarch.
- Make a hole in center of ball and put in filling.
- Roll again in cornstarch and fry until brown (10 minutes).
- Add all other ingredients, heat medium.
- Mix well. Turn to low heat, cover and cook for 30 minutes.
- For pork:
- Saute in tried out salt pork and cook for 1 hour.
- Potatoes can be filled with Cheddar cheese.
