Fruit Pizza
- 1 refrigerated roll sugar cookies
- 11 oz. softened cream cheese
- 1/2 c. sugar
- 1/4 tsp. vanilla
- 4 types fresh fruit (kiwi, peaches, bananas, etc.)
- 1/2 jar apricot preserves
- 4 Tbsp. water
- 7 c. flour
- 2 c. sugar
- 5 tsp. baking powder
- 3 beaten eggs
- 1 c. milk
- 1 tsp. vanilla
- 1 tsp. salt
- 2 tsp. nutmeg
- 1 lb. lard
- 1 c. currants, rinsed and drained
- Mix all the ingredients into a dough; add 1 cup currants, rinsed and drained, and work into dough.
- Roll out on a floured board; cut into 2 1/2 or 3 inch circles.
- Fry on lightly greased electric frypan or griddle at 350u0b0.
- Fry until cookies puff up and look shiny, then turn over and cook until finished.
