Cranberry-Pear Chicken
- 1 pkg. boneless chicken breasts
- 1 Tbsp. vegetable oil, divided
- salt and pepper to taste
- 1 onion, chopped (about 1 c.)
- 3 firm pears, peeled, cored and diced or 6 canned halves, drained and diced
- 1/2 c. fresh cranberries or 1 can whole cranberry sauce
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground ginger (optional)
- Trim and discard visible fat from chicken.
- In a large nonstick skillet, over medium-high heat, heat 1 1/2 teaspoons oil. Sprinkle chicken breasts lightly with salt and pepper.
- Brown about 2 minutes pre side.
- Remove from pan and reserve.
- Add remaining oil to skillet and cook onions until softened, about 4 minutes.
- Add pears, cranberries, cinnamon and ginger.
- Stir to combine well.
- Place chicken on top of fruit and onions.
- Cover and simmer 10 to 12 minutes until cooked through.
- Serve with brown, wild rice.
