Paz'S Catfish With Topping
- 6 fillets
- 1 1/4 tsp. salt, divided
- 1 tsp. black pepper
- 2 (10 oz.) pkg. chopped spinach, thawed and drained
- 2 Tbsp. Parmesan cheese, grated
- 6 Tbsp. butter or oleo, divided
- 4 Tbsp. lemon juice
- 1/2 tsp. garlic powder
- 1/4 c. bell pepper, chopped fine
- 1/2 c. celery, chopped fine
- 1/4 c. green onions (including the tops), chopped
- 2 c. fresh bread crumbs
- 1/2 c. sour cream
- 1/2 tsp. paprika
- 1 lemon (twist) and parsley for garnish
- Rinse and pat dry the fillets.
- Sprinkle with 3/4 teaspoon of salt and 1/2 teaspoon black pepper.
- Set aside.
- Grease 9 x 13-inch baking dish lightly and spread spinach over bottom.
- Put on the rest of the salt and pepper.
- Spread Parmesan cheese over spinach. Melt 4 tablespoons butter; stir in lemon juice and garlic powder. Brush catfish fillets lightly with this mixture and place fillets on spinach.
- Keep the rest of butter mixture.
