Favorite Vegetable Soup
- 1/2 c. diced onion
- 4 packets instant chicken broth
- 4 garlic cloves, minced
- 1 1/2 c. green beans
- 1 1/2 c. carrots, sliced
- 1 c. sliced celery
- 1 can chopped tomatoes
- 1 Tbsp. chopped fresh parsley
- 1/2 tsp. basil leaves
- 1/4 tsp. pepper
- 4 c. water
- In a 3-quart pan, combine diced onion, instant chicken broth and garlic cloves; cook on medium until onion is translucent, stirring.
- Add green beans, carrots, sliced celery, chopped tomatoes, chopped fresh parsley, basil leaves and pepper; stir in well.
- Cover; cook over low heat, stirring occasionally, for 10 minutes.
- Add water; bring to a boil.
- Reduce heat to medium. Cover; cook until vegetables are soft, approximately 20 minutes. Makes 7 to 8 servings.
