Soft Bread Sticks

  1. Sprinkle yeast over very warm water in a 1-cup measure.
  2. Very warm water feels comfortably warm when dropped on wrist.
  3. Stir in 1 teaspoon of the honey.
  4. Let stand until bubbly, about 10 minutes. Mix butter, salt, boiling water and remaining honey in a large bowl, cool to lukewarm.
  5. Beat egg in small cup, reserve 1 tablespoon for brushing sticks.
  6. Stir remaining egg into butter mixture.
  7. Stir in yeast until blended.
  8. Add 2 cups of the flour; gradually stir in enough extra flour to make a soft dough.
  9. Do not knead.
  10. Divide dough into 12 equal parts.
  11. Roll each on floured surface to make an even stick 12 inches long.
  12. Place on greased cookie sheets about 2 inches apart.
  13. Mix reserved egg with 1/2 teaspoon water, brush on sticks and sprinkle on seed or salt.
  14. Let stand, uncovered, 30 minutes.
  15. Bake at 425u0b0 for 15 minutes.
  16. Remove to wire rack.
  17. Serve warm.
  18. For shorter sticks, divide dough into 24 parts.
