Triple Crown Meat Loaf
- 1 (3 oz.) can French fried onion rings, finely crushed
- 2 Tbsp. brown sugar
- 4 tsp. yellow mustard
- 2 Tbsp. flour
- 1/4 c. catsup
- 2 lb. ground beef
- 1 egg, slightly beaten
- 4 slices American cheese, cut in half
- Combine 1/3 cup crushed onion rings and brown sugar.
- Put 1 tablespoon mixture in each of 8 small, well-greased ovenproof custard cups.
- Top with 1/2 teaspoon mustard.
- Melt butter in small saucepan.
- Remove from heat and stir in flour to form a smooth paste.
- Add catsup; stir to blend.
- Combine hamburger, egg, catsup mixture and remaining crushed onions.
- Mix thoroughly.
- Press 1/3 cup meat into custard cup.
- Place 1/2 slice cheese on top of meat. Add more meat on top of cheese and seal edges.
- Place custard cups on cookie sheet.
- Bake, uncovered, at 350u0b0 for 30 minutes, until done.
- Drain any accumulated grease.
- Run knife around edge of custard cup and invert onto platter.
- Make sure you scrape bottom of custard cup to get glaze out.
- Spread on meat loaf.
