Hot German Potato Salad
- 4 slices bacon, cut into 1-inch pieces
- 1/3 c. cider vinegar
- 1 1/2 tsp. sugar
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1/4 c. water
- 2 tsp. cornstarch
- 12 oz. frozen fries (about 3 c.)
- 1/3 c. sliced scallions
- 3 Tbsp. chopped parsley
- Cook bacon over medium-high heat in large nonstick skillet until crisp.
- Remove from heat.
- Remove bacon with slotted spoon and set aside.
- Strain all but three tablespoons of fat from pan. To fat in skillet, add vinegar, sugar, salt and pepper.
- Mix water with cornstarch and stir into skillet.
- Cook and stir over medium heat until potatoes are tender, stirring once or twice.
- Add bacon, onions and parsley.
- Mix gently to heat through.
- Serve hot.
- Makes four side dish servings.
