Quick Chicken Noodle Soup
- 2 medium onions
- 1/2 pkg. mixed vegetables (frozen)
- 2 to 3 stalks celery
- leftover chicken, cooked or 3 skinless, boneless chicken breasts, cut up
- 4 bouillon cubes
- 2 pkg. Oodles of Noodles (chicken flavor)
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1 tsp. pepper
- 1 Tbsp. cornstarch
- 2 bay leaves
- Fill Dutch oven pot 3/4 full with water.
- Put in spices and bouillon.
- Cut up and put in onion and celery.
- Bring to boil. Throw in leftover chicken (if chicken breast is uncooked, put in with onion and celery) and mixed vegetables.
- Let cook on medium heat 15 to 20 minutes.
- Put in flavor package from 1 of the Oodles of Noodles (not noodles).
- Mix cornstarch with small amount cold water in separate bowl until smooth.
- Turn heat up on high to boil.
- Pour in starch mixture slowly while stirring soup.
- Break up noodles while still in package.
- Pour into soup.
- Let cook another 3 minutes.
- Serve.
