Stir-Fried Beef Lo Mein

  1. In a medium sized bowl, toss meat with soy sauce and let stand while preparing the other ingredients.
  2. In a large heavy skillet or wok, heat 1 tablespoon oil over moderately high heat.
  3. When oil is very hot, drain beef, saving marinade; add beef to oil.
  4. Stir quickly for about 3 minutes, until brown.
  5. Place a colander over the marinating bowl and pour in beef pan juices.
  6. Wipe the skillet with a paper towel.
  7. Heat the remaining 3 tablespoons of oil in skillet over moderate heat.
  8. Add onion and cook, stirring frequently, until it softens.
  9. Add cabbage and sprinkle with salt. Cook about 2 minutes.
  10. Sprinkle sugar inside the edge of the skillet.
  11. Stir in beef, the juices from the bowl and the chicken broth.
  12. Cook about 1 minute.
  13. Add spaghetti.
  14. Stir mixture and heat for about 3 minutes.
