Moist Meatloaf

  1. Preheat oven to 350F/180u0b0C.
  2. Melt butter in large skillet and cook onions slowly until translucent, about 5 minutes. Add pine nuts if using, and cook until onions are tender. Remove from heat and leave to sit.
  3. Mix the ingredients for the sauce in a separate bowl and set aside.
  4. In the meantime, mix salt, dry mustard, garlic powder and breadcrumbs together. Add to beef in a large bowl. Combine Worcestershire with egg and add to beef mixture. Add onions.
  5. With clean hands (duh!) combine mixture thoroughly and shape into loaf and place in a 9" X 13" glass baking dish. (You can also divide the mixture evenly and make 4 individual loaves which should be about 9 oz. each). Pour the tomato sauce around the loaf and cover with foil.
  6. Place in oven and bake for 1 to 1 1/4 hours. Remove from oven and let sit 10 minutes prior to serving. Slice into 1/2" pieces and serve with tomato sauce. Goes well with smashed taters and veggie of your choice. :).
