Colby Fiesta Salad
- 4 (1 oz.) flour tortillas
- 1 lb. ground turkey, beef or veal
- 1 pkg. taco seasoning mix
- 3/4 c. water
- 2 c. shredded lettuce
- jalapeno peppers, chopped (if desired)
- 1 large tomato, chopped
- 1 medium onion, sliced in rings
- 8 olives
- 1/2 c. evaporated skim milk
- 4 oz. Colby cheese, shredded
- Warm tortillas and place in a 4 or 5-inch container to bake for 8 to 10 minutes.
- Cook meat, then add taco seasoning and water.
- Heat.
- Set aside.
- Bring milk to a boil and add cheese, stirring until cheese melts.
- Add jalapeno peppers, if desired. Keep warm.
- Place tortilla bowls on plate.
- Divide lettuce, tomato and onion equally.
- Top with equal portions of meat, then cheese sauce.
- Place 2 olives in each bowl.
- Makes 4 servings.
