Sugarless Cake
- 3 eggs
- 1/2 tsp. vanilla
- 2 Tbsp. liquid sweetener or 3 heaping Tbsp. Sugar Twin
- 2 c. flour (self-rising)
- 1/2 tsp. soda
- 1/4 tsp. salt
- 3/4 c. cooking oil
- 1 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. brown sugar (Sweet 'N Low)
- 1 c. raisins
- 20 oz. can pineapple
- 3 bananas or 1 c. applesauce
- 1/2 c. pecans or walnuts
- Mix eggs in a large bowl. Add cooking oil, vanilla, liquid sweetener or Sugar Twin.
- Set aside.
- Sift together flour, soda, salt, nutmeg, cinnamon and brown sugar.
- Cook in water the raisins until tender. Drain and cool.
- Add crushed pineapple. Add juice also, mashed bananas or applesauce (no sugar).
- Do not use both. Add the pecans or walnuts (optional). Mix all together and pour into angel food baking pan. Bake at 350u0b0 for 45 to 50 minutes.
