Chicken Fricassee And Dumplings
- 2 to 3 lb. chicken, chopped
- 1 c. Bisquick
- 2 tsp. salt
- 1 tsp. paprika
- 1/4 tsp. poultry seasoning
- 2 Tbsp. shortening
- 1 Tbsp. butter
- 1 can cream of chicken soup
- 1 1/2 c. milk
- 1/2 tsp. parsley
- dumpling dough
- Put Bisquick, salt, paprika, salt and pepper in a plastic bag and shake chicken to coat thoroughly.
- Melt shortening and butter in a large skillet; brown chicken on all sides.
- Remove chicken, drain fat, stir in soup and milk.
- Add chicken.
- Cover and simmer 1 hour.
- Twenty minutes before chicken should be done cooking, prepare dumpling mix.
- Add parsley flakes and poultry seasoning to dough before adding liquids.
- Drop dough by spoonfuls onto hot chicken and cook uncovered 10 minutes.
- Cover and cook 10 minutes longer.
