Ruth'S Chicken
- 6 to 8 pieces chicken parts
- 1 large green pepper
- 1 large red pepper
- 2 garlic cloves (fresh)
- 3 bay leaves
- 1 Tbsp. vegetable flakes
- 2 medium onions
- 1 Tbsp. sugar
- 1 (16 oz.) can tomato sauce
- 4 oz. can sliced mushrooms
- 1/2 c. water
- dash of cayenne red pepper or chili powder
- black pepper and salt to taste
- Clean chicken parts.
- Remove all fat and skin.
- Add lemon juice to water.
- Pat chicken parts dry (paper towel).
- Season chicken with salt, black pepper, onion powder and garlic powder. On top of stove, saute garlic, onions, green and red peppers and vegetable flakes in 2 tablespoons of vegetable oil (do not brown). Remove from skillet.
- Add 1 tablespoon of vegetable oil.
- Add chicken parts until brown.
- Spoon sauteed seasonings over chicken parts; add tomato sauce, sugar and cayenne red pepper.
- Add water and cook for 15 minutes.
- Turn chicken.
- Add mushrooms and continue to cook until chicken is done.
- Remove bay leaves. Serve over rice or noodles.
- Serves 6.
