Mama'S Forgotten Chicken
- 1 c. uncooked white rice
- 6 to 8 pieces chicken
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 1/2 c. water
- 1 pkg. Lipton onion soup mix
- 1/4 c. Worcestershire sauce
- 1 onion (sweet Vidalia is best!)
- 1 Tbsp. butter
- salt and pepper to taste
- Preheat oven to 350u0b0. Place rice in bottom of shallow, greased baking pan. Combine cream soups and water. Pour half of the mixture over rice; let stand a few minutes. Place chicken pieces on top of rice and soup; salt and pepper. Rub chicken pieces with butter. Pour remaining cream soup mixture over chicken and top with dry onion soup mix. Add sliced onion over this, if desired. Cover with foil and forget about it for 1 hour and 45 minutes. Serves 6.
