Potato Casserole

  1. Cook potatoes, in boiling water to cover, 30 minutes or until tender.
  2. Drain, let cool to touch.
  3. Peel and cut into strips or squares.
  4. Set aside.
  5. Combine 1/4 cup margarine and next 5 ingredients in a large bowl; gently stir in potatoes and cheese. Spoon into a lightly greased baking dish.
  6. Combine 3 tablespoons margarine and stuffing mix; sprinkle over potato mixture.
  7. Bake, uncovered, at 350u0b0 for 25 minutes.
  8. Yields 8 servings.
