Vegetable Soup (With Meat)
- 3 lb. stew meat
- 1 bone (if possible)
- 1 qt. string beans
- 1 qt. tomatoes
- 1 can corn
- 1 can LeSueur peas
- 3 onions, chopped
- 6 good size potatoes, chopped
- 1/2 lb. okra
- 3 or 4 leaves mustard greens (optional)
- 1/3 stalk celery
- 4 carrots
- 1 qt. water
- salt and pepper to taste
- sugar to taste
- 1/4 c. rice
- Salt and pepper meat and brown (not with flour).
- Place meat in large soup pot with 1 quart water.
- Cook until tender.
- Add string beans; cook 5 minutes.
- Add potatoes, okra, celery, carrots and rice.
- Cook until potatoes are tender, but not mushy.
- Add all other ingredients and cook a while longer.
- Good for company. Serve with corn muffins.
