Kahlua Stir-Fry Chicken

  1. Coat chicken in mixture of egg, 2 tablespoons oil and cornstarch.
  2. Heat remaining oil in wok or skillet.
  3. Add chicken. Cook until golden brown.
  4. Drain well.
  5. Remove all but 2 tablespoons oil from wok; heat.
  6. Add all vegetables except green onions.
  7. Stir-fry 3 to 5 minutes.
  8. Add Kahlua-cornstarch mixture. Bring to boil, then simmer to slightly thicken.
  9. Add chicken and cashews.
  10. Heat.
  11. Remove to serving platter.
  12. Garnish with green onions.
  13. Serves 4 to 6.
