Fruit Cake
- 3 c. raisins, washed and drained
- 3 c. chopped dates
- 2 to 3 c. chopped nuts
- 1 lb. candied fruit
- 1/4 c. molasses
- 1 c. fruit juice
- 1 c. oleo or butter
- 1 1/4 c. brown sugar
- 4 eggs
- 2 c. flour
- 1/2 tsp. salt
- 1/4 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. mace
- Mix together raisins, dates, nuts, candied fruit, molasses and juice.
- Cream together butter or oleo and sugar.
- Add eggs one at a time; beat well after each addition.
- Sift dry ingredients.
- Mix eggs, sugar and butter mixture into fruit mixture.
- Add dry ingredients.
- Line 2 tube or loaf pans with aluminum foil; grease well.
- Bake at 275u0b0 for 2 1/2 hours.
- Place shallow pan of water on lower shelf.
