Capellini Amanda(A Light And Easy Dish Served Over Angel Hair Pasta)
- 12 small clams, scrubbed
- 12 mussels, de-bearded and scrubbed
- 2 Tbsp. olive oil
- 1/4 c. red wine vinegar
- 1 tsp. salt
- 1 tsp. pepper
- 1 Tbsp. fresh basil
- 2 (14.5 oz.) cans diced tomatoes
- 1 small onion, chopped
- 3 to 4 cloves garlic, crushed (to personal taste)
- 1 c. fresh mushrooms
- 1 medium tomato, chopped
- 1 lb. angel hair pasta
- 1/4 c. Romano cheese
- 1/4 c. Parmesan cheese
- In olive oil, saute onion, garlic and mushrooms.
- Add cans of tomatoes.
- Simmer on low for 10 minutes.
- Add red wine vinegar, salt, pepper, basil and cheeses.
- Simmer.
