Healthy Carrot-Raisin Cake

  1. Preheat oven to 325u0b0.
  2. In a small bowl, combine the baking soda and warm water, and set the mixture aside.
  3. In a large bowl, combine the carrots, yogurt, sugar, applesauce, oil, whole egg or egg whites, cinnamon, nutmeg, cloves, salt (if desired) and raisins.
  4. Stir in the whole wheat flour and all-purpose flour, then stir in the reserved baking soda mixture.
  5. Pour the batter into a greased 8 or 9-inch square baking pan.
  6. Place the pan in the hot oven, and bake the cake for 1 hour or until a tester inserted into the center of the cake comes out clean.
  7. Let the cake cool in the pan on a rack for about 10 minutes before turning the cake out onto the rack to cool completely.
