Bacon-Vegetable Hash
- 1/2 lb. lean slab bacon, diced
- 3 Tbsp. butter
- 6 medium Russet potatoes, unpeeled and diced
- 1 large green pepper, diced
- 1 medium onion, coarsely chopped
- 1/2 lb. mushrooms, coarsely chopped
- salt
- freshly ground black pepper
- Saute bacon in large skillet and saute over low heat.
- When evenly browned and the fat is rendered, drain the bacon on paper towels and set it aside.
- Pour off all but 3 tablespoons of the bacon drippings and discard.
- Melt the butter in the pan with the remaining bacon drippings.
- Add the potatoes, green pepper, onion and mushrooms.
- Saute over medium heat until the potatoes are tender, about 20 to 25 minutes, making sure to stir frequently. Add a bit more butter, if necessary, to prevent sticking.
- Add the reserved bacon, salt to taste, and plenty of fresh black pepper. Saute for an additional 5 minutes, to allow flavors to blend. Serve warm.
