Crabmeat And Mushrooms Au Gratin

  1. Melt 1/4 cup butter in large skillet over medium heat.
  2. Add green and red peppers.
  3. Cook 3 minutes.
  4. Add mushrooms.
  5. Sprinkle with lemon juice and salt.
  6. Cook for 2 minutes, stirring or tossing occasionally.
  7. Add cream and reserved crabmeat liquid; bring to boiling.
  8. Combine melted butter and flour; blend until smooth.
  9. Stir flour mixture into cream-vegetable mixture.
  10. Cook, stirring constantly, until sauce has thickened and is smooth.
  11. Add crabmeat; simmer for 2 minutes, or until crabmeat is heated through.
  12. Turn mixture into a 1-quart shallow baking dish. Sprinkle with Swiss cheese.
  13. Place under preheated broiler.
  14. Broil until cheese is golden brown.
  15. Makes 6 servings.
