Chocolate Pie
- 2 sq. unsweetened chocolate or 3 Tbsp. cocoa (1 sq.)
- 1 1/2 c. sugar (maybe 2)
- 3 Tbsp. cornstarch
- 1/2 tsp. salt
- 3 c. milk
- 3 egg yolks, lightly beaten
- 1 Tbsp. butter
- 1 1/2 tsp. vanilla
- Mrs. Smith pie shell (follow directions)
- Shave chocolate into strips.
- Mix sugar, cornstarch, chocolate and salt in saucepan.
- Stir in milk gradually; cook over medium heat, stirring constantly until mixture thickens and comes to a boil.
- Boil for 1 minute; remove from heat.
- Stir half the hot mixture into egg yolk; blend egg yolk mixture into hot mixture remaining in saucepan.
- Boil for 1 minute longer, stirring constantly.
- Remove from heat.
- Blend in butter and vanilla; pour immediately into pie shell.
- Chill for 2 hours.
- Garnish with whipped cream.
