Yam Cake
- 1 c. mashed yams
- 2 c. brown sugar, packed
- 4 eggs
- 1/2 tsp. vanilla
- 2 1/2 c. plain flour
- 1 tsp. soda
- 1 tsp. cinnamon
- 1 c. chopped nuts
- 3/4 c. butter
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. nutmeg
- 1 Tbsp. lemon juice
- Boil yams, mash and let cool.
- In large bowl, cream together butter and sugar until fluffy.
- Add eggs one at a time, beating after each egg.
- Stir in lemon juice and vanilla.
- Sift flour, soda, baking powder, cinnamon, salt and nutmeg.
- Beat into first mixture; add nuts and turn into a greased and floured 10-inch tube pan.
- Bake at 300u0b0 for 1 hour and 20 minutes or until a wooden pick comes out clean.
