Fried Peppers In Tomato Sauce
- 12 to 15 large, sweet peppers (some red, if available)
- 2 small hot peppers
- 1 tsp. dried basil
- pinch of oregano
- pinch of sugar
- dash of garlic salt (optional)
- 1/4 tsp. salt (if desired)
- 1 (16 oz.) can tomato sauce
- 1/4 c. oil (for frying)
- Wash and dry peppers; cut in halves lengthwise and remove seeds.
- Cut each half into 3 or 4 strips.
- Spray heavy pan with Pam.
- Add cooking oil and heat until very hot.
- Drop in pepper strips.
- Reduce heat to medium.
- Stir constantly to prevent burning.
- Cook until peppers are tender, not mushy.
- Add tomato sauce and other ingredients.
- Simmer for 10 to 15 minutes.
- Serve with beans or other vegetables.
- This can be canned to use throughout the year.
