Chicken Gumbo With Rice

  1. Cut chicken into serving pieces.
  2. Wash good in cold water.
  3. Pat dry.
  4. Heat 2 tablespoons fat in soup kettle.
  5. Add chicken and ham. Cover and cook 15 minutes.
  6. Add salt, pepper, onion, green peppers, thyme and tomatoes.
  7. Add water.
  8. Cover and allow to simmer 2 hours or until chicken is tender.
  9. Add okra.
  10. Cover and cook 20 minutes or until okra is tender.
  11. If desired, remove chicken from bones.
