Gonzales Seafood Gumbo
- 1 c. cooking oil
- 4 crabs or 2 cans crabmeat
- 1 large onion, chopped
- salt and pepper to taste
- 2 1/2 lb. shrimp, peeled
- 1 c. instant flour
- 1 pt. oysters
- 1 bunch green onions
- 12 c. water
- file
- Brown flour in cooking oil until rich brown, then add chopped onion and cook slowly until golden.
- Add water, salt, pepper and green onions.
- Bring to a boil.
- When mixture boils, add shrimp and crab (if frozen or fresh).
- Cook until shrimp are done.
- At this point the mixture can be frozen, if desired.
- When ready to serve, reheat to a boil and add oysters.
- Cook 1 minute at a boil, or more if preferred.
- Remove from heat and add file to taste (usually about 2 tablespoons).
- Add parsley to garnish at this time.
- Also liquid crab boil (1 drop or two) to give rich seafood flavor.
