Bessie'S Buckeyes
- 1 (1 lb.) box 10x sugar
- 1 1/4 c. peanut butter
- 1/2 c. butter
- 1 tsp. vanilla, butter and nut flavoring
- 1 lb. dark chocolate candy coating wafers
- In a large bowl, mix butter, peanut butter and flavoring.
- Add sugar, a little at a time, mixing well after each addition.
- Roll into 3/4-inch balls and place on waxed paper on a cookie sheet. If mixture sticks to your hands, add a little more sugar.
- Don't make it too dry.
- Put balls in the freezer until very well chilled.
- Melt wafers over hot water in double boiler.
- Stirk toothpick in center of almost frozen or frozen balls.
- Dip in chocolate; cover all but the top.
- Let drip.
- Place back on waxed paper.
- Remove toothpick.
- Repeat until all balls are dipped. When buckeyes come to room temperature, close hole.
