Carol'S Favorite Spiced Pork Chops
- 6 to 8 loin or rib pork chops (1/2-inch thick)
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 2 large onions, sliced thick and separated into rings
- 2 acorn squash, cut into 1-inch rings
- 3 medium apples, cored and cut into 1-inch rings
- 1/4 c. light butter, melted
- 1 tsp. Jamaican ginger
- 3 Tbsp. honey
- 1/4 c. water (may substitute apple juice or white wine)
- 1 1/2 tsp. pumpkin pie spice
- 8 unpeeled red skin potatoes, cut in halves
- Wash pork and vegetables first.
- Cook pork chops in pan on medium heat until nicely brown on both sides.
- Gently place pork in ungreased rectangular baking dish (13 x 9 x 2-inch).
- Sprinkle chops with salt and pepper.
- Arrange onion rings, squash rings and neatly sliced apple rings on pork chops.
- Place potatoes around sides of dish.
