Savory Cheese Soup

  1. In a large saucepan, saute onion in butter until tender. Add flour, salt, pepper and garlic powder; stir until smooth. Gradually add milk; cook and stir over medium heat until thickened and bubbly.
  2. Meanwhile, bring chicken broth to a boil in a small saucepan.
  3. Add carrots and celery; simmer for 5 minutes or until vegetables are tender.
  4. Add to milk mixture and stir until blended.
  5. Add cheeses.
  6. Cook and stir until melted (do not boil). Garnish with chives if desired.
  7. Yield: about 4 servings.
