Saturday Special
- 1 lb. lean ground beef
- 1/2 c. chopped onion
- 1 c. sour cream
- 1 (10 3/4 oz.) can cream of mushroom soup
- 1 (16 oz.) can whole kernel corn, drained
- 1 (2 oz.) jar chopped pimiento
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 large tomato, thinly sliced (optional)
- 1 (2.8 oz.) can French fried onions
- Microwave Directions:
- Crumble ground beef into 2-quart casserole.
- Add onion.
- Microwave on High for 5 minutes, stirring once halfway through cooking time.
- Drain and return to casserole dish.
- Add sour cream, soup, corn, pimiento, salt and pepper. Cover and microwave 5 minutes on High.
- Top with tomato slices. Microwave for 3 minutes on High or until tomatoes are slightly softened.
- Garnish with French fried onions.
- Let stand 3 minutes, uncovered.
- (If tomato is not used, cook an additional 3 minutes on High before adding French fried onions.)
- Makes 6 servings.
