Pasta Salad
- 6 c. corkscrew pasta
- 1/2 c. carrots, sliced
- 1/4 c. celery
- 1 c. broccoli flowerets
- 1 c. red pepper, diced
- 1/4 green onion, chopped
- 1/2 c. cherry tomatoes, halved
- 1 c. oil-free Italian dressing
- 2 tsp. Dijon mustard
- 2 Tbsp. white wine vinegar
- 1/8 tsp. pepper
- 1 clove garlic, minced
- 2 Tbsp. lemon juice
- 1/4 tsp. basil
- For dressing, stir together Italian dressing, mustard, vinegar, pepper, garlic, lemon juice and basil.
- Drain cooked pasta.
- Put in a large bowl.
- Add vegetables and dressing; toss to mix.
- Add tomatoes before serving.
- For a main dish, add turkey or chicken (1 1/2 cups cooked and diced).
