Homemade Marinara Sauce
- 3 medium onions, diced
- 8 fresh garlic cloves, finely minced (or more to taste)
- 1/3 cup fresh basil
- 1 sprig fresh thyme leaves or 1/2 teaspoon dried thyme
- 1 sprig fresh oregano or 1 teaspoon dried oregano
- 2 bay leaves (remove when done)
- 2 sprigs fresh parsley or 1 teaspoon dried parsley
- 1 teaspoon sea salt
- 1 carrot
- 1 zucchini (chopped)
- 1 eggplant (chopped)
- 5 lbs roma tomatoes
- Place all ingredients in a large crockpot.
- cook overnight on low.
- Remove sprigs of herbs
- Next morningpuree all in a food processor.
- Use fresh or store in the fridge up to 1 week, or can it according to your canner's instructions for tomato products.
- I freeze this sauce in 1 qt freezer bags.
