Golden Ham Casserole

  1. Cook potatoes, carrots and celery in boiling unsalted water until tender but crisp.
  2. Drain and set aside.
  3. In 3 tablespoons butter, saute ham, green pepper and onion until ham is golden brown.
  4. Put ham mixture and vegetables in a greased 2-quart casserole.
  5. Melt 1/4 cup butter in heavy saucepan over low heat. Add flour stirring until smooth.
  6. Cook 1 minute, stirring constantly, until thick and bubbly.
  7. Stir in cheese, salt and pepper.
  8. Cook over low heat until cheese is melted and slightly thickened.
  9. Pour cheese sauce over ham and vegetables.
  10. Sprinkle bread crumbs over top.
  11. Bake at 375u0b0 for 25 to 30 minutes.
