Hucklebuck Cookies

  1. cream crisco. eggs, cocoa, 1 1/2 tsps vanilla and sugar.set aside.
  2. In a seperate bowl, combine flour, baking powder and 3/4 tsp salt.add 1 1/2 cups milk to cocoa mixture alternating with dry ingredients.mix well after each addition until batter is smooth --
  3. drop by tblsful on ungreased sheet.
  4. bake at 400* for 7-8 minutes.
  5. cool on rack.
  6. FILLING:.
  7. blend together remaining ingredients and spread on one side of a cookie and top with second cookie.
  8. store in an airtight container.
