Pineapple Upside-Down Muffins

  1. Heat oven to 400u0b0.
  2. Place 1 teaspoon margarine in each of 12 medium muffin cups.
  3. Heat in oven until melted.
  4. Divide the 2 tablespoons brown sugar among cups (1/2 teaspoon each).
  5. Divide pineapple among cups (about 1 tablespoon each).
  6. Place 1 cherry half, cut side up, in center of each cup.
  7. Mix remaining ingredients; beat vigorously 30 seconds.
  8. Fill muffin cups about 3/4 full.
  9. Bake until golden brown, about 15 minutes.
  10. Immediately invert pan on heatproof serving plate; let pan remain a few minutes.
  11. Serve warm.
  12. Makes 12 muffins.
