Butterscotch Oatmeal Cookies
- 1 c. I Can't Believe It's Not Butter!
- 1 3/4 c. firmly packed dark brown sugar
- 2 large eggs
- 1 tsp. vanilla
- 2 c. all-purpose flour
- 2 c. quick cooking oats
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1/4 c. water
- 1 c. butterscotch morsels
- 1 c. chopped nuts
- In large bowl, beat margarine and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Add vanilla.
- Combine flour, oats, baking soda and salt; add alternately with water to creamed mixture.
- Stir in butterscotch morsels and nuts.
- Drop by heaping teaspoonfuls onto a lightly greased cookie sheet.
- Bake in a preheated 375u0b0 oven for 8 to 10 minutes until edges are lightly browned.
- Yield:
- about 6 dozen cookies.
