Spinach Quiche
- 1/2 c. margarine, melted
- 10 eggs
- 1/2 c. sifted all-purpose flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 (10 oz.) pkg. frozen chopped spinach, thawed
- 1 (8 oz.) can green chillies, seeded and chopped
- 1 pt. fine curd cottage cheese
- 1/2 lb. shredded Cheddar cheese
- 1/2 lb. Jack cheese, shredded
- Preheat oven to 400u0b0. Place butter in 13 x 9 x 2-inch pan in preheating oven just to melt, about 3 minutes.
- Beat eggs in large bowl; mix in flour, baking powder and salt.
- Squeeze thawed spinach very dry and add to egg mixture along with melted butter, chillies and cheeses.
- Pour mixture into pan; bake 15 minutes. Reduce heat to 350u0b0; bake an additional 35 to 40 minutes.
- Let stand 5 minutes to set.
- Cut in 60 squares for hors d'oeuvres.
