Sausage 'N Sauerkraut
- 2 lb. fresh Polish sausage
- 1 (16 oz.) can sauerkraut, rinsed and drained
- 1 (16 oz.) can tomatoes, cut up with liquid
- 1 c. chopped celery
- 1 large onion, chopped
- 1 large green pepper, chopped
- 3 Tbsp. brown sugar
- 1 bay leaf
- 1 tsp. dried oregano
- 1/2 tsp. salt
- 1/4 tsp. pepper
- mashed potatoes (optional)
- Cut sausage into 1-inch slices and saute in a Dutch oven until fully cooked and brown.
- Drain.
- Add sauerkraut, tomatoes with liquid, celery, onion, green pepper, brown sugar and seasonings. Mix well.
- Cover and simmer for 20 to 25 minutes or until vegetables are tender.
- Remove bay leaf.
- Serve over mashed potatoes if desired.
- Yield:
- 8 servings.
